Who doesn’t love warm, soft chocolate chip cookies fresh out of the oven? I’ve tried a few keto chocolate chip cookie recipes, but found most of them to be time consuming and disappointing because the consistency just seemed off to me.

My husband and I are obsessed with the Kirkland protein bars from Costco. We each eat these every day as a meal replacement. One day I had the idea to try “baking” one of the chocolate chip cookie dough protein bars in our air-fryer. It smelled amazing while it was baking but I burned them the first time.

It took me a few tries but I finally got them to be perfect! They came out slightly crispy on top and gooey in the center. The best part is each one is only 1 net carb! Plus, there’s only 1 ingredient!

I highly recommend that you try these. Just be careful because each air fryer is different – it may take a few tries to find the temperature and time that is perfect for you.

First, cut the protein bar into 3 pieces. Then, take a piece of aluminum foil and poke holes in it to allow air to flow through it in the air fryer. Place the 3 “cookies” onto the foil and place the foil in the air fryer. My air fryer (GoWISE USA 12.7 quart Air Fryer) has trays in it so I placed the foil on one of the trays and put the tray into the fryer as far from the heat source as possible.

I found that the perfect time/temperature combination for my air fryer is 5 minutes at 320 degrees. Definitely keep an eye on them while they cook to ensure they don’t burn.

Definitely eat them while they’re still warm.

Each “cookie” is 1 net carb. You can’t beat that!

Ingredients

  • 1 Kirkland Chocolate Chip Cookie Dough protein bar (sold at Costco)

Instructions

  • Cut 1 protein bar into 3 pieces. Line air fryer or air fryer tray with tin foil and poke holes in it. Place protein bar pieces on the foil and bake in the air fryer for 5 minutes at 320 degrees.
    Note: every air fryer cook differently so watch closely to ensure the bars don't burn. If your air fryer has multiple trays in it, place the tray as far from the heat source as possible. If you don't have an air fryer, try these in the toaster oven at 350 degrees for 4-5 minutes.
    3 net carb for 3 cookies (The entire protein bar is 3 net carbs)
