I literally ate this cucumber salad every single day this summer! It’s light, refreshing, quick, easy and SO delicious! It’s the perfect side dish or can be eaten by itself. And, did I mention that it only has 4 ingredients, takes less than 5 minutes to make and it’s inexpensive?! Plus, it’s only 4 net carbs per serving! Winner, Winner!!
I’ve also mixed this salad with grilled chicken and cherry tomatoes. The tomatoes increase the carb count, but it’s worth it!
I use Olive Garden dressing in this recipe, because let’s face it – who doesn’t love it? I’ve also made this recipe for a family member who follows a plant-based, gluten free diet. I simply substituted a milk-free/egg free Italian dressing and I left out the feta cheese.
You can eat this as soon as you make it, but I like it better when the cucumbers have a chance to marinate in the dressing. I don’t like my salad too “soupy” but if you like the extra liquid, then feel free to add more dressing.

4 Ingredient Cucumber Salad – Keto|Low-Carb
Ingredients
- 1 English Cucumber – around 12 oz. (I prefer a seedless cucumber)
- 1/3 cup Red Onion
- 1/4 cup Olive Garden Italian Dressing (Use 1/3 cup if you like a stronger flavor)
- 1/2 cup Crumbled Feta Cheese
Instructions
- Slice cucumber to desired thickness (Typically 0.25" slices). Add to bowl.
- Chop red onion and add to bowl.
- Add Feta cheese and dressing to bowl.
- Stir until cucumber, onion and cheese are coated in the dressing.
- (Optional) Cover and refrigerate for at least one hour.
