I modified an existing “poor man’s” beef stew recipe years ago and it’s definitely one of our favorites! It’s easy – put all the ingredients in a slow cooker and let it cook all day. The house will smell amazing and then you’ll have a delicious, hearty and comforting dish ready for dinner!
I typically meal prep on the weekends so when I make this, I chop my carrots and green beans ahead of time and store them in the refrigerator until I’m ready. I also brown the ground been and onion in a skillet ahead of time so when I’m ready to cook all I have to do is cut my potatoes and then add all of the ingredients to the crockpot.
This is the perfect meal for a cold day!
Crockpot Ground Beef and Veggie Stew
This is an easy and inexpensive stew recipe that is delicious, hearty and so filling!

Equipment
- Slow cooker
Ingredients
- 1 pound ground beef
- 1/2 sweet onion
- 2 cup potato, cut in bite size pieces
- 1 1/2 cup chopped carrot
- 1 1/2 cup cut green beans
- 10.75 oz can concentrated tomato soup
- 2 1/2 cups beef broth or stock
- 2 tablespoon tomato paste
- 1 1/2 teaspoon minced garlic
- 1 teaspoon dried parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon Italian seasoning
- salt and pepper to taste
- 1 cup frozen peas (or 1 can peas)
Instructions
- In a skillet, cook the ground beef and diced onion until beef is browned.
- Add potatoes, carrots and green beans to the slow cooker.
- Add cooked ground beef/onion mixture to slow cooker.
- In a bowl, whisk together beef broth, tomato soup, tomato paste, minced garlic, dried parsley, garlic powder, onion powder, Italian seasoning, salt and pepper. Add to slow cooker.
- Cook on low 6-7 hours, stirring occasionally.
- Add peas to the slow cooker and cook an additional 30-60 minutes.
